No matter what you eat, death plays a major role. Avoiding meat doesn’t spare you from having blood on your hands.
Modern mechanized agriculture results in a lot of death. Combines kill rodents and even baby deer in corn fields. Soy and coffee crops are two leading reasons for deforestation in Brazil, leading many animals to lose their habitats.
And then you have to account for all the insects that die in vegetable production.
If your goal is to lower the amount of death, you should not look to vegetables, but to bigger animals.
If the most ethical diet is one the lowers the death count as much as possible, then eating the biggest animals is the most ethical thing to do. That and byproducts like eggs.
Inuit cultures made up for the lack of vegetable variety by eating organ meat. Many vitamins and minerals that you find in vegetables can be found in organs. You can get nutrients you need to survive from organs, and reduce the amount of death you cause by eating by repeatedly eating the same being.
Instead of supporting the animal slaughter required to eat your salad you could instead choose the diet that requires much less death. Eating a plate full of bison and bison organs.
