One of the interesting things about working in a couple of restaurants is realizing that all restaurants get their food from the same places.
In Canada it is Sysco. I don’t know that exact number but probably 80% of restaurants by 99% of their food supplies for Sysco. Gordon Food takes the majority of the rest.
When you go out to restaurants, it feels like you have almost infinite options when it comes to dishes and styles, but the funny thing is that most of the food is coming from the same place.
When it comes to food, Sysco is like the restaurant protocol. It is like the internet to restaurants websites.
